ROCKMELON AND HONEYDEW GREEK SALAD
As the scorching summer sun continues to burn around Australia, easy summer salads are a great option for a quick, easy and healthy meal. Super Food Ideas’ rockmelon and honeydew Greek salad is a fresh version of the popular salad.

1/4 (300g) rockmelon
1/4 (300g) honeydew melon 200g tomato medley, quartered 1 Lebanese cucumber, thinly sliced
small red onion, thinly sliced into rounds 1/3 cup pitted Kalamata olives tablespoons fresh oregano leaves 1/3 cup small fresh basil leaves
1 tablespoon extra-virgin olive oil 2 tablespoons white wine vinegar 100g fetta, cut into 1cm cubes
Step 1: Cut each melon in half lengthways to form 2 wedges. Peel and discard skin and seeds. Cut into 1cm slices. Place in a large bowl.
Step 2: Add tomato, cucumber, onion, olives, oregano and basil. Toss to combine. Arrange on a serving plate.
Step 3: Whisk oil and vinegar together in a small jug. Season with salt and pepper. Top salad with fetta and drizzle with dressing. Serve.
